This dish comes together in just a few minutes, making it perfect for a quick and satisfying weekday dinner. It packs protein from the eggs and rich flavour from caramelized onions and aromatic spices. Serve this tasty and nutritious egg curry with rice or rotis for a wholesome meal that everyone will love. Plus, you can easily fit it into a variety of meal plans, whether you’re a busy mom, a working professional, or someone looking for easy recipes that don’t compromise on taste or nutrition.
Easy Egg Curry Recipe
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 3 adults or a family of 2 adults and 2 children
Ingredients:
- 6 eggs
- 1 cup caramelized onions
- 2 tbsp coconut oil
- 1/4 tsp turmeric
- 2 tsp coriander seeds
- 1 tsp garam masala
- 1 heaped tsp chili powder (adjust to taste)
- Salt, to taste
- Curry leaves and coriander leaves for garnish
Instructions:
- Firstly, boil the eggs: hard boil the 6 eggs, and once done, peel and set them aside.
- Next, prepare the spice mix: in a wok, heat 2 tbsp of coconut oil on low heat. Then, add 1/4 tsp turmeric, 2 tsp coriander seeds, and 1 tsp garam masala. Heat for 10 to 15 seconds until aromatic and turn of the heat.
- At this time, add 1 heaped tsp chili powder. Mix well to prevent burning.
- Now, combine ingredients: turn the stove back on to low heat. Add 1 cup of caramelized onions to the spice mix. Stir until well combined. Preparing caramelised is very easy if you have a pressure cooker. It svaes a lot of your time at stove sauteing. Refer to my recipe for easy caramelised onion here 🙂
- Finally, season and garnish: adjust the salt to taste. Garnish with curry leaves and coriander leaves.
- Serving suggestion: serve this flavourful egg curry with steamed rice or warm rotis for a complete meal.
