Ingredients

  • 2 eggs
  • 1 tbsp finely chopped shallots
  • 3-4 curry leaves, finely chopped
  • 1 tbsp coriander leaves, finely chopped
  • 1 tsp grated ginger
  • 1 green chili, finely chopped
  • ½ tsp chili flakes (optional)
  • ½ tsp turmeric
  • Salt, to taste
  • 1½ tbsp vegetable oil

Instructions

  1. Whisk the Eggs: In a bowl, crack 2 eggs and whisk them.
  2. Add Aromatics & Spices: To the eggs, add the chopped shallots, curry leaves, coriander leaves, ginger, green chili, chili flakes (if using), turmeric, and salt. Whisk everything together to ensure the ingredients are evenly mixed.
  3. Prepare the Pan: Heat 1½ teaspoons of vegetable oil in a well-seasoned 8-inch cast iron or nonstick skillet over medium heat.
  4. Cook the Omelette: Pour the egg mixture into the skillet, spreading it evenly. Reduce the heat to low and let the eggs cook for about 2 minutes, until the edges are set.
  5. Flip & Finish: Carefully lift the omelette from the edges and flip it over without breaking. Cook for an additional 30 seconds to 1 minute, then remove from the pan.
  6. Serve & Enjoy: Serve your omelette hot with toast for breakfast, or as a side dish with rice and vegetables. Enjoy the burst of flavors!
