Easy Chicken Curry Recipe

Ingredients
For marinating:
- 500 grams of chicken breast or thighs, cut into bite-sized pieces
- Salt to taste
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of garam masala
- 1 teaspoon of chili powder (optional)
For curry:
- 1 cup of caramelized onions
- 2 tbsp of coconut oil
- 1/4 tsp of turmeric
- 2 tsp of coriander seeds
- 1 tsp of garam masala
- 1 heaped tsp of chili powder (adjust to your taste)
- Salt to taste
- Curry leaves and coriander leaves for garnish
Instructions:
- Marinate the Chicken: In a bowl, coat chicken pieces with salt, black pepper, garam masala, and optionally chili powder. Let them marinate for at least 30 minutes.
- Preheat the Oven: Next, preheat your oven to 200°C (400°F).
- Roast the Chicken: Once the oven is ready, place the marinated chicken pieces on a baking tray lined with parchment paper. Roast them for 15 minutes, flipping halfway through, until cooked through.
- Prepare the Spice Mix: Meanwhile, in a wok, heat 2 tbsp of coconut oil over low heat. Add 1/4 tsp turmeric, 2 tsp coriander seeds, and 1 tsp garam masala. Let the spices warm up for 10 to 15 seconds until aromatic. Turn off the heat, then add chili powder and mix well.
- Add Caramelized Onions and Chili Powder: Incorporate 1 cup of caramelized onions into the spice mix and turn on the heat. Mix thoroughly to combine with the spices. For easy caramelized onions, refer to my recipe that can be prepared in just 15 minutes.
- Combine with Roast Chicken: Next, add the roasted chicken pieces to the wok. Gently stir until they are fully coated with the spice and onion mixture. Adjust the consistency by adding boiling water if needed.
- Season and Garnish: Taste the dish and adjust the salt to your preference. Finish by garnishing with fresh curry leaves and coriander leaves for an extra burst of flavour and colour.
