Beetroot oats porridge
A creamy, pink, savory porridge made with oats, beetroot, yogurt, and a crunchy tempering.
Ingredients
For the porridge
- ½ cup rolled oats
- 1 ½ cup water
- 1 small beetroot, grated
- 1 tsp coconut oil
- 1 cup Greek yogurt
- Salt to taste
For the tempering
- 1 tsp coconut oil
- ½ tsp mustard seeds
- A few curry leaves
- 1 tbsp roasted peanuts
- 1 Dry Red Chilly (optional)
Instructions
- Heat 1 tsp coconut oil in a pan. Add grated beetroot and sauté for 2–3 minutes. Add 1/4 tsp of salt for taste
- Add oats, water, and milk. Stir and bring it to a gentle boil.
- Add salt and cook for 5–7 minutes until soft and creamy.
- Switch off the heat. Let it cool for a minute and mix in Greek yogurt.
- Heat oil in a small pan. Add mustard seeds, chillis, curry leaves, and peanuts.
- Pour the tempering over the porridge and enjoy warm.
