Make Vanpayar Mezhukkupuratty at home with this easy recipe. This Kerala-style Adzuki Beans Stir Fry, spiced with shallots and red chilies, offers a nutritious and flavorful meal that's perfect with rice or kanji.

Ingredients

  • 1 cup adzuki beans (pre-soaked overnight)
  • 1/4 teaspoon turmeric
  • 1 teaspoon salt (divided)
  • 10 small Indian shallots (or 1/3 cup crushed shallots)
  • 3 dry red chilies
  • 1 tablespoon coconut oil
  • 1 sprig curry leaves
  • Salt to taste

Instructions

1. Cook the Beans: Pressure Cooker: Add the soaked adzuki beans, 1/4 teaspoon turmeric, and 1/2 teaspoon salt to a pressure cooker. Pressure cook for 2 whistles.

  • If you are using Instant Pot: Add the soaked adzuki beans, 1/4 teaspoon turmeric, and 1/2 teaspoon salt to an Instant Pot. Pressure cook on high for 5 minutes and let the pressure release naturally.

2. Prepare the Shallot and Chili Mix: Crush 10 small Indian shallots and 3 dry red chilies using a mortar and pestle.

  • Notes: If using a blender, be careful not to make a fine paste. The crushed mixture should measure approximately 1/3 cup.

3. Sauté the Aromatics: Heat 1 tablespoon of coconut oil in a wok or skillet over medium heat. Add the crushed shallot and chili mix along with 1 sprig of curry leaves and a pinch of salt. Sauté until the mixture turns golden brown and aromatic.

4. Combine and Cook: Drain the cooked adzuki beans and add them to the skillet. Toss or gently combine everything together.

5. Cover and cook for 5 minutes, allowing the flavors to meld.

6. Serve: Serve hot with rice or kanji.
