There are some dishes we carefully plan, style, photograph, and proudly post everywhere. Then there are dishes like this Millet Khichdi—the simplest of the dishes that you almost forget to share them.

Honestly, I have been meaning to post this recipe for the longest time.

However, every single time I make it, the same thing happens. Someone lifts the lid, the aroma fills the kitchen, bowls appear out of nowhere, and before I even think about taking pictures, half the pot is already gone.

Khichdi has been a staple in our home ever since my little one started solids. It became a regular weeknight dinner, and for months, it appeared on our table almost every week. Even today, it’s the kind of meal that quietly finds its way into our menu on busy weekdays, rainy evenings, tiring days, or whenever we’re craving something warm and comforting. Unlike heavily spiced versions, mine is intentionally simple. However, the gentle spices, sweet aromatics, and a generous drizzle of ghee come together to create a bowl that’s comforting and surprisingly full of flavour.

And, everyone loves it.

Friends ask for it. Family specifically requests it. It becomes even more special when paired with sambar—my absolute favourite combination. There is something magical about soft, creamy khichdi soaking up warm sambar that instantly feels like home.

This version uses little millet instead of rice, which adds a lovely nutty flavor and slightly fluffy texture. Combined with moong dal, vegetables, turmeric, and a fragrant ghee tempering, the result is hearty yet light, nourishing yet comforting.

The final touch is what truly makes it irresistible—sizzling cumin, black peppercorns, curry leaves, roasted peanuts, and warm ghee poured over steaming khichdi.

It’s simple food.

Yet, somehow, it always feels special.

Ingredients

  • ½ cup little millet
  • ½ cup moong dal
  • 4–5 shallots
  • ¾ cup mixed vegetables
  • 4 cups water
  • ¼ teaspoon turmeric
  • Salt
  • 1 tablespoon ghee
  • 2 tablespoons peanuts
  • 1 teaspoon cumin seeds
  • ½ teaspoon whole black peppercorns
  • Curry leaves
  • Coriander leaves

Instructions

  1. Rinse the millet and moong dal two to three times until the water runs mostly clear. Finely chop the shallots and prepare the vegetables.
  2. Add the washed millet, moong dal, shallots, mixed vegetables, turmeric, salt, and 4 cups of water to the Instant Pot. Mix everything well.
  3. Close the lid and pressure cook on High for 5 minutes. Allow the pressure to release naturally. The khichdi should look soft, creamy, and slightly porridge-like.
  4. Heat ghee in a small pan. Roast the peanuts until lightly golden. Add cumin seeds, black peppercorns, and curry leaves. Let everything sizzle until fragrant.
  5. Pour the hot tempering over the khichdi. Garnish generously with fresh coriander leaves and serve immediately.
